vegan "ham" 

This is a great versatile option to substitute meat. You can make sandwiches, stews, salads , pour gravy on top, cut it in cubes and make kebabs among other things. If you taste the liquid mixture and note it's too salty , don't get scared; it is supposed to be that way . I hope you enjoy this version of "ham" or Seitan with your loved ones ;)

INSTRUCTIONS

2 1/2 CUPS           VITAL WHEAT GLUTEN 

1/2 CUP                 GARBANZO BEAN FLOUR 

1 CUP                     CHOPPED ONIONS 

2 TBSPS.                 CHOPPED GARLIC 

 

3/4 CUP                  WATER 

1/4 CUP                   COCONUT AMINOS 

1/4 CUP                   ORGANIC KETCHUP 

2 TBSPS.                  GRAPESEED OIL 

1/2 TSP.                    LIQUID SMOKE 

2 TBSPS.                  BREWER'S YEAST 

2 TBSPS.                 

1 TBSP.

2 TSPS.                     DEHIDRATED ONION

1 TBSP.                      VEGETABLE BASE 

1 1/2 TSP                   PINK HIMALAYAN SALT

1/2 TSP                     FRESHLY FROUND PEPPER

1/2 TSP                     NUTMEG 

1. CUT AND PREPARE ALL INGREDIENTS . 

2. IN A MEDIUM HEAT PAN ADD ONE TBSP. OF THE OIL  AND SAUTE THE ONION FOR THREE MINUTES UNTIL TRANSLUCENT; THEN ADD THE GARLIC AND SAUTE FOR A MINUTE AND SET ASIDE . 

3. IN A BLENDER , PUT ALL THE REMAINING INGREDIENTS AND THE WATER ; EXCEPT THE FLOURS . BLEND UNTIL IS WELL PUREED . 

3. TO THE LIQUID SEASONING ADD BOTH FLOURS AND MIX UNTIL WELL COMBINED. YOU CAN START WITH A SPOON AND THEN FINISH WITH YOUR HANDS. 

4. FOR THIS STEP YOU CAN USE CHEESECLOTH OR A GOOD FABRIC NAPKIN . I ALWAYS USE A NAPKIN WHICH DESIGNATED FOR THIS USE. SPRAY WITH NON-STICK SPRAY , THEN SHAPE THE MIXTURE INTO A LOG FORM AND PUT ON TOP OF THE NAPKIN. 

5. ROLL THE NAPKIN OVER THE MIXTURE AS TIGHT AS POSSIBLE AND TIE THE ENDS WITH BUTCHERS TWINE . 

 

6. IN A MULTIPURPOSE COOKER . PLACE A CUP O WATER. PLACE THE STEAM BASKET AND COOK IN THE HIGH SLOW COOKER FUNCTION FOR TWO HOURS.  TURNING THE HAM UPSIDE DOWN AFTER ONE HOUR.  IF YOU DON'T HAVE ONE YOU CAN DO THE SAME IN A CONVENTIONAL COVERED POT , BUT YOU WILL NEED A STEAMER THAT FITS THE POT . COOK AND LOW HEAT FOR TWO HOURS. 

7. AFTER IS COOKED , UNWRAP AND LET COOL TO ROOM TEMPERATURE AND SLICE AS DESIRED.
