strawberry& blueberry icebox cake

Today's recipe is perfect for the summer , specially for the fourth of July . It is very refreshing and not too sweet. It solves the craving or need for cake without doing any baking at all :) .It is also lower in sugar than a regular cake. Relying more on the sweetness of the fruit. As always I hope you give this a try and share it with loved ones ;)

INGREDIENTS 
INSTRUCTIONS

8 OZ                   COOL WHIP TOPPING 

3/4 LB.                SLICED STRAWBERIES

3/4 CUP            ORGANIC FROZEN BLUEBERRIES

 

8 OZ                   CREAM CHEESE 

 

8 PIECES           GRAHAM CRACKERS 

 

1 1/2 TSP.             VANILLA EXTRACT 

 

1 TBLSP.              LIQUID STEVIA 

 

1 CUP                   PREPARED GELATIN

 

PREPARED GELATIN :

 

1 CUP                 MACADAMIA MILK 

 

1 1/2 OZ             UNFLAVORED /UNSWEETENED 

                            GELATIN  

1. PREPARE THE GELATIN FIRST. IN A MEDIUM HEAT POT; PLACE THE MILK AND BRING TO SIMMER. INCE IT HAS SIMMERED ADD THE GELATIN AND WHISK FOR ABOUT 3 MINUTES THEN LET COOL. ONCE IT HAS COOLES IT WILL BE THICK GELLY CONSISTENCY. 

2. CUT AND PREPARE THE INGREDIENTS. 

3. IN A BOWL , PLACE THE SOFTENED CREAM CHEESE. ADD THE VANILLA, LIQUID STEVIA AND WHISK WITH A HAND MIXER UNTIL EVERYTHING IS INCORPORATED. 

4. TO THE WHIPPE CHEESE, ADD THE GELATIN MIX AND WHISK AGAIN WITH THE HAND MIXER , THEN REPEAT THE PROCESS WITH THE COOL WHIPPED TOPPING. 

 

5. AFTER THIS STEP, YOU ARE READY TO ASSEMBLE THE DESSERT. 

 

6. LINE A LOAF BREAD PAN WITH PARCHMENT PAPER, SO THAT YOU CAN REMOVE IT ONCE IT'S READY . 

 

7. IN THE BOTTOM OF THE MOLD, PLACE A LAYER OF GRAHAM CRACKERS, THEN 1/3 OF THE COOL WHIP MIXTURE, FOLLOWED BY A LAYER OF SLICED STRAWBERRIES AND 1/3 OF THE BLUEBERRIES. REPEAT THIS PROCESS THREE TIMES . FINISHING WITH THREE STRIPES OF STRAWBERRIES AND TWO OF BLUEBERRIES.

 

8. COVER AND FREEZE FOR AT LEAST THEREE HOURS , BUT PREFERABLY OVERNIGHT . 

 

RECOMENDATIONS :

IF YOU LEAVE IT OVERNIGHT IN THE FREEZER, THE NEXT DAY TRANSFER IT TO THE FRIDGE SO THAT IT IS DEFROSTED , BUT FIRM WHEN YOU WISH TO EAT IT .
