rice cooker FRITTATA
This is a great and versatile dish. It can be used for breakfast , brunch or a light lunch with a salad. You can really customize it to whatever you have in your fridge. and omit the meat and it is vegetarian. The beauty of this is that you don't really have to watch it or worry that it will burn. Even better if you do it on the slow cooker because you can dump the ingredients before going to sleep and wake up to a wonderful smell of breakfast in the morning . It is also fantastic for meal prep and then portion out and freeze for breakfast during the week. I hope you can enjoy this recipe ;).

8 MEDIUM EGGS

1/4 CUP CHOPPED BELL PEPPERS
​
1/4 CUP CHOPPED MUSHROOMS
​
1/2 CUP CHOPPED TOMATOES
​
3 SLICES COOKED AND CHOPPED
UNCURED TURKEY BACON
​
2 SPRIGS CHOPPED GREEN ONIONS
​
1 TBLSP. GARLIC POWDER
​
1 TSP. PINK HIMALAYAN SALT
​
1/4 TSP. FRESHLY GROUNDED
BLACK PEPPER
​
1/8 CUP HEAVY CREAM
​
1/4 CUP GRATED OR CHOPPED CHEESE
​
NON-STICK SPRAY OR BUTTER FOR COOKING

1. CUT AND PREPARE ALL INGREDIENTS .
​
2. TO THE EGGS BOWL ADD THE HEAVY CREAM AND WHISK UNTIL IT IS AN UNIFORM MIXTURE
​
3. ADD THE SEASONINGS, GREEN ONIONS, MUSHROOMS, PEPPERS, TOMATOES, BACON AND MIX TOGETHER.

4. BRUSH THE INSIDE OF THE RICE COOKER WITH BUTTER OR NON-STICK SPRAY .
​
5. POUR THE EGG MIXTURE AND SPRINKLE THE CHEESE ON TOP .
​
6. NOW, FOR THE COOKIN SETTING THERE ARE VARIOUS OPTIONS:
A. IF YOU HAVE A REGULAR RICE COOKER OR A MULTIPURPOSE COOKER WITH THE WHITE RICE FUNCTION; JUST DO THE RICE FUNCTION TWICE.
B. IF YOU ARE USING A SLOW COOKER; YOU CAN COOK ON HIGH FOR TWO HOURS OR ON LOW MODE FOR 8 HOURS.

7. TO UNMOLD , SIMPLY RUN A SPATULA OR KNIFE THROUGH THE SIDES LIKE A CAKE AND INVERT ONTO A PLATE , THEN DIVIDE IN PORTIONS AND ENJOY ;).
