pumpkin soup 

A very simple and quick recipe for the fall or really any time of the year. Good for rainy days . Rich in vitamin A , high in antioxidants, lutein and Zeaxanthin. So it helps the immune system and the eyesight. Hope you enjoy ;)

2 1/2 CUPS                                 PUMPKIN 

2 1/2 CUPS                                 WATER

2 TSPS.                                         CHICKEN BASE 

1/4 TSP.                                        BLACK PEPPER 

2 TBLSPS.                                    GREEN ONION 

2 LEAVES                                    CULANTRO O RECAO 

                                                      

2 TBLSPS.       

OPTIONAL - A PINCH OF SALT IF NEEDED 

NOTE - IF RECAO IS NOT AVAILABLE IN YOUR AREA YOU CAN SUBSTITUTE FOR CILANTRO.

CROUTONS

SOUR CREAM 

1. CUT AND PREPARE ALL INGREDIENTS . 

2. PUT ALL INGREDIENTS TO BOIL , ECXEPT FOR THE SALT . 

3. BOIL IN HIGHT HEAT FOR 15 MIN 

4. PUEREE IN A BLENDER OR FOOD PROCESSOR . 

5. PUT TOPPINGS OF CHOICE,  SERVE AND ENJOY ;)
