pancakes

Fall is finally here!!! and in honor of it here is one of my family's favorites. Great for the weekend breakfast or  the upcoming holiday season . Here is my version and I hope you can enjoy it. Servings are quite unclear with this recipe , because one hungry person can eat it all or four not so hungry ones can share it hehehe.....

makes 10 pancakes 
kosher style | vegetarian 
INGREDIENTS
INSTRUCTIONS

1 3/4 CUPS                            SELF-RISING FLOUR

1/2 CUP                                   PUMPKIN PUREE 

​

2                                                 WHIPPED EGG WHITES 

​

2                                                 EGG YOLKS 

​

3/4 CUP                                  MILK 

​

1 TSP.                                        CINNAMON 

​

1/4 TSP.                                    CARDAMOM (GREEN)

​

1 TSP.                                        VANILLA EXTRACT 

​

4 TBSPS.                                 ERYTHRITOL

                                                   (SUGAR SUBSTITUTE)

​

2 TBSPS .                                MELTED BUTTER 

​

1/8 TSP.                                   CREAM OF TARTAR

​

                                                  NON- STICK COOKING

                                                   SPRAY

1. PREPARE AND ORGANIZE ALL INGREDIENTS .

​

2.  WHIP EGG WHITES WITH THE CREAM OF TARTAR. USE EITHER A HAND OR STAND MIXER . 

​

3. IN A BOWL WHISK  ALL THE INGREDIENTS ECXEPT THE EGG WHITES . 

​

4. NOW GENTLY FOLD THE EGG WHITES IN TWO BATCHES WOTH THE PANCAKE MIX , UNTIL IT BECOMES A UNIFORM MIXTURE . 

​

5. HEAT YOUR PAN OR GRIDDLE  WITH NON-STICK SPRAY AT MEDIUM HEAT . 

​

6. DROP THE MIXTURE ONTO THE PAN AND FORM INTO CIRCLES (IT DOESN'T HAVE TO BE PERFECT , IT'S ACTUALLY BETTER IF THEY AREN'T , BEAUSE YOU CAN TELL THEY WERE MADE FROM SCRATCH ).

7. WHEN LITTLE BUBBLES START TO FORM IN THE SURFACE IN MEANS IT'S READY TO BE FLIPPED . 

​

8. AFTER FLIPPING LET COOK ON TH OTHER SIDE FOR A MINUTE OR TWO . 

​

9. REPEAT THE PROCESS UNTIL THERE'S NO BATTER LEFT. 

 

10. ENJOY WITH SYRUP, AGAVE, HONEY, MAPLE SYRUP OR SUGAR FREE ALTERNATIVE OF CHOCIE ;)
