mixed vegetable pakoras 

Pakoras are delicious Indian crispy friend snacks . There are many varieties and versions. As always this is my humble version . If you can handle spiciness , then adjust the chilli pepper powder to your likeness . Since Indian chili powder is very spicy 1/4 tsp. is all I can handle jijijii.... At the same time if you cannot handle spiciness, just omit the chili powder, they will still be delicious; not to mention the option of adding cheese inside it's crazy good :):). I hope you can give this a try with loved ones.

INGREDIENTS
INSTRUCTIONS

2 CUPS               SLICED ONIONS

1 1/2 CUPS          JULIENNED ZUCCHINI 

 

1/2 CUP               JULIENNED RED PEPPER 

 

2/3 CUP              SHREDDED CARROT 

 

1 CUP                   SHREDDED POTATO 

 

1 CUP                   CHICKPEA FLOUR 

 

3 TBLSP.              GRAPESEED OIL 

 

1/8 CUP.              CLUB SODA 

 

1 TBLSP.               PINK HIMALAYAN SALT 

 

2 TBLSP.              CHOPPED CILANTRO 

​

1 TBLSP.               TURMERIC POWDER 

​

1 TBLSP.               GARLIC POWDER 

​

1/2 TSP.                GARRAM MASALA 

​

1/4 TSP.                RED CHILLI POWDER 

​

1/2 TSP.                MILD CURRY POWDER 

​

1/4 TSP.                CORIANDER POWDER 

​

1/4 TSP.                GRATED GINGER 

​

1/4 TSP.                GRATED GARLIC 

​

GRAPESEED OIL FOR FRYING

OPTIONAL :

​

STRING CHEESE , VEGAN MOZZARELLA CHEESE OR MONTEREY JACK CHEESE. 

 

 

1. CUT AND PREPARE YOUR INGREDIENTS . 

​

2. ADD ALL THE VEGETABLES AND SPICES TO A BOWL. MIX UNTIL COMBINED. 

​

3. ADD THE OIL AND MIX THOROUGHLY . SINCE THE SPICES WERE ADDED, THE VEGETABLES WILL START RELEASING SOME OF THEIR WATER. 

 

4. ADD THE CHICKPEA FLOUR AND MIX WELL. THE BEST TOOL FOR THIS IS YOUR HANDS :) , I SUGGEST YOU USE GLOVES. 

 

5. ADD THE CLUB SODA AT YOUR DISCRETION . YOU MAY NOT NEED THE 1/8 OF THE CUP OR YOU MAY NEED A BIT MORE. THE CONSISTENCY SHOULD BE LIKE A PANCAKE BATTER. NOT TOO THICK , NOT TOO THIN . 

 

6. HEAT YOUR PAN WITH THE GRAPESEED OIL AT MEDIUM HIGH HEAT . ENOUGH TO COVER ONE INCH OF THE PAN YOUR USING.

7. ONCE THE OIL IS READY; START DROPING THE BATTER IN THE SIZE YOU WOULD LIKE . I RECOMMEND ABOUT TWO TABLESPOONS PER PAKORA . 

 

8. FRY UNTIL IT IS GOLDEN BROWN ON BOTH SIDES. THEN TAKE OUT AND PLACE ON PAPAER TOWELS TO DRAIN ECXESS OF OIL  . ENJOY ;)

TO TAKE PAKORAS AND EXTRA LEVEL :

​

* WITH A SPOON TAKE ABOUT A TABLESPOON OF THE MIX AND TOP IT WITH A PIECE OF CHEESE WHETHER REAL OF VEGAN , THEN TOP IT WITH ANOTHER TABLESPOON OF THE BATTER. FRY ON BOTH SIDES INTIL GOLDEN BROWN .
