BEANS & LEGUME SALAD

This is a crowd pleaser . I always get asked for this recipe and its super simple to make. even kids can make it . Not to mention that it's vegan and full of protein. It's great for parties because you actually need to make it at least one day before the party , that way you get to spend more time with guests instead of in the kitchen . if you have a gluten allergy or intolerance eat it with  corn chips instead of pita or crackers . I hope you enjoy with loved ones ;)

INGREDIENTS 
INSTRUCTIONS

15 OZ CAN                  RED KIDNEY BEANS

15 OZ CAN                  SMALL WHITE BEANS

15 OZ CAN                  BLACK BEANS 

15 OZ CAN                  PINK BEANS 

15 OZ CAN                  CHICKPEAS 

3/4 CUP                       SHREDDED CARROT

1/2 CUP                        RED & YELLOW BELL PEPPER

1/2 CUP                        CUBANELLE PEPPER 

2/3 CUP                       RED ONION

1/4 CUP                       EXTRA VIRGIN OLIVE OIL

1/4 CUP                       WHITE VINEGAR 

1 1/2 CUPS                   ZESTY ITALIAN DRESSING 

1/2 TSP.                        PINK HIMALAYAN SALT 

1. CUT AND PREPARE ALL INGREDIENTS. TO PREPARE GRAINS : DRAIN AND RINSE EACH ONE TO REDUCE THE AMOUNT OF SALT. YOU CAN ALSO USED DRY ONES AND SOFTEN THEM YOURSELF. 

2. PLACE THE BEANS A LEGUME IN A BOWL , ADD THE CARROTS, PEPPERS, ONION, OLIVE OIL , VINEGAR, ITALIAN DRESSING AND SALT. 

3. MIX ALL INGREDIENTS TOGETHER AND LET MARINATE FOR AT LEAST 24 HOURS IN THE FRIDGE . IT IS EVEN BETTER AFTER TWO DAYS. 

4. ENJOY WITH PITA CHIPS OR CRACKERS.
