egg salad

This flavorful and easy dish is great for any time of the day; whether is breakfast, lunch, snack or dinner. It is low in carbs , full of protein, has vitamin E, K, D, A, potassium, selenium , riboflavin, lutein, omega 3's among other nutrients. So it will provide your body good fuel for the day. I hope you can give this simple recipe a try ;)

INGREDIENTS 
INSTRUCTIONS

6 LARGE              EGGS 

1 TBLSP.               MUSTARD 

4 TBLSP.              MAYONNAISE 

 

3 TBLSP.              DICED GREEN ONION

 

3/4 TSP.               PINK HIMALAYAN SALT 

 

1/2 TSP.                ERYTHRITOL 

 

1 TSP.                    DRIED DILL 

 

1/4 TSP.                GROUND BLACK PEPPER  

1. CUT AND PREPARE THE INGREDIENTS . 

2. IN A POT AT HIGH HEAT , BOIL WATER. ONCE BOILING , ADD THE EGG FOR EXACTLY 10 MIN . 

3. WHILE THE EGGS ARE BOILING, PREPARE A BOWL FULL OF ICE AND WATER. ONCE THE 10 MINUTES ARE DONE TRANSFER THE EGGS TO THE ICE WATER. THIS PREVENTS OVER COOKING THEM AND MAKES THE PEELING MUCH EASIER. 

4. TO PEEL THE EGGS : IN A HARD SURFACE, HIT THE TOP OF THE EGG, THEN THE BOTTOM OF THE EGG. AFTER, BREAK THE SIDES BY ROLING THE EGG. ONCE THE SHELL IS BROKEN ON ALL SIDES , PINCH IT ON THE TOP AND THE EGG WILL PEEL VERY EASILY . 

5. SLICE THE EGGS IN HALF LENGHT WISE AND SEPARATE THE YOLKS FROM THE WHITES. 

6. CUT THE WHITES TO THE DESIRED SIZE. DEPENDING ON YOUR TEXTURE PREFERENCE . 

7. MASH THE YOLKS WITH A FORK, THEN ADD THE MAYO, MUSTARD, GREEN ONIONS, SALT, PAPPER, ERYTHRITOL AND DILL. MIX UNTIL COMBINED. 

8. ADD THE WHITES AND GIVE IT ANOTHER MIX. 

9. SERVE ON YOUR FAVORITE BREAD, PITA OR LETTUCE.
