caramelized bananas  

french toast

With this recipe we will visit the European continent :):). The origin of french toast is first found in the Roman empire and they called it Pan Dulcis. The french call it Pain Perdu , because this dish is best made with old bread.  I made this one vegan and with a reduced quantity of sugar, because bananas have enough sugar in them . Since coconut nectar is low in the glycemic index and very nutritious it is a great substitute for sugar . I hope you enjoy making it with loved ones ;)

INGREDIENTS 
INSTRUCTIONS

5 MEDIUM           BANANAS

6 SLICES               VEGAN BREAD OF CHOICE

​

1/2 CUP                 UNSWEETENED COCONUT

                                 CREAM 

​

1/2 CUP                 JUST EGG 

​

1/3 CUP                CHOPPED PECANS

​

1/3 CUP                ERYTHRITOL 

​

1/3 CUP                COCONUT NECTAR 

​

3 TBLSP.               VEGAN "BUTTER"

​

1 TSP                      CEYLON CINNAMON 

​

2 TSP.                    VANILLA EXTRACT 

​

OPTIONAL :

​

1 TSP.                    FLEUR DE SEL 

1. CUT AND PREPARE THE INGREDIENTS .

FOR THE CARAMELIZED BANANAS:

​

2. IN A MEDIUM HEATED PAN , MELT ONE TABLESPOON OF THE "BUTTER".

​

3. ONCE THE BUTTER IS MELTED, ADD THE BANANAS IN THE PAN . BROWN SLIGHTLY ON BOTH SIDES (ABOUT A MINUTE). TRANSFER THEM TO A BOWL AND DET ASIDE.

4. IN THE SAME PAN , ADD THE COCONUT NECTAR, ERYTHRITOL AND HALF OF THE VANILLA. ONCE THE ERYTHRITOL IS DISSOLVED, INTRODUCE THE BANANAS BACK TO THE SYRUP .

5. MIX THE BANANAS WITH THE SRUP GENTLY UNTIL WELL COMBINED . THEN ADD HALF OF THE PECANS AND TRANSFER TO A BOWL . 

 

 FOR THE FRENCH TOAST PART:

 

6. IN A BOWL , ADD THE JUST EGGS, COCONUT CREAM, CINNAMON AND REMAINING VANILLA. MIX UNTIL WELL COMBINED. 

 

7. IN A MEDIUM HEAT PAN ADD THE SECOND TABLESPOON OF "BUTTER" AND LET MELT.

8. ONCE IT'S MELTED, DIP THE SLICE OF BREAD IN THE "EGG" MIXTURE, ON BOTH SIDES .

9 . PLACE IN THE PAN IN BATCHES 2 OR 3 AT A TIME DEPENDING ON THE SIZE OF YOUR PAN . BROWN ON BOTH SIDES (APROX. 3-4 MIN ON EACH SIDE). REPEAT THE SAME PROCESS UNTIL YOU FINISH ALL SLICES OF BREAD. REMEMBER TO ADD "BUTTER"  BETWEEN EACH BATCH. 

 

10 ONCE YOU FINISH THE FRENCH TOAST, SPOON THE CARAMELIZED BANANAS ON TOP. FINISH WITH THE REMAINING PECANS AND A SPRINKLE OF THE FLEUR THE SEL.
